This delightful pink sparkling burgundy comes from Bailly, near Chablis. Made mainly from Pinot Noir grapes, with 10% Gamay, grown on a vein of chalky-limestone soil (Kimmeridgian) originating in Champagne. It shows a purity of raspberry fruit and fine mousse, which go so well with smoked salmon or sushi.
